Paleo Apple Crispies
Ingredients:
1 3/4 cups Almond flour or Almond Meal
1/3 cup melted coconut oil
3 tsp. cinnamon
1/2 tsp. nutmeg
2 tbsp. honey
1/2 tsp. salt
3 tsp. Vanilla extract
3 apples (Gala for sweeter, Cortland or Grannie Smith for tart) peeled, cored and sliced
1 cup unsweetened apple sauce
Directions 
Preheat oven to 350 degrees.
1. Peel, core and slice apple. Place apples in a baking dish or pie plate.
2. Mix apples with 2 tsp cinnamon and top with apple sauce and sit aside.
3.Combine talmond flour, 1 tsp cinnamon,  salt and nutmeg.
4.In a separate bowl combine wet ingredients; coconut oil, vanilla extract and honey.
5, Add wet ingredients to  dry ingredients and sprinkle over apples.
6.Cover with  aluminumfoil and bake for approximately 45 minutes, or until apples start to bubble.
7.uncover and bake for a few minutes to brown the top.

Did you make any resolutions for 2014 ? The custom of making new years resolutions can be traced back to the Bablylonians. The early Romans made promises to their god Janus at the beginning of the year. So making resolutions is not a new idea. According to a study, most people do not keep their new years resolutions. However if I remember correctly about 40% do keep their resolutions or at least keep them for awhile.

The most common resolutions in our times are promises relating to health and fitness and various other self improvements. The resolutions that fail are probably somewhat unrealistic. Promising to lose x number of pounds is kind of unrealistic,and unrealistic goals will proabably not be kept. Many diet programs and plans are unrealistic in that they require things that are not easily worked into the average lifestyle. They may involve unhealthy starvation tactics that do more harm than good This is why Paleo makes such a great new years resolution. Paleo does not involve starvation. The term “gluten free” is now officially a part of the american culture. Gluten refers to a protein found mainly in wheat, rye, barley and other foods. If you are truly allergic to gluten, you have a condition known as celiac disease. In this condition, the gluten actually damages the villi of the intestines which causes malabsorption leading to a host of unhealthy diseases and conditions. It appears however, that you dont necessarily have to have celiac disease to experience symptoms. It appears that some people are simply more sensitive to gluten which does also produce symptoms of poor health. One should always treat this as a medical condition and follow the advice of your doctor.

So how do Paleo and gluten free compare ? Both are diets based on autoimmune responses. To compare them can be a bit tricky. For the most part pure Paleo, is gluten free, and gluten free is not Paleo. One of the only ways Paleo can not be gluten free is by cross contamination. In other words, you may be eating a Paleo meal of animal proteins and  vegetables, however if they have not been handled correctly, they could have traces of gluten that might produce symptoms in a celiac person. On the other hand, gluten free is not Paleo. The biggest difference here is that a gluten free diet can include rice and dairy products, which a Paleo diet cannot.
Is Paleo a better gluten free? In a way, Paleo could be considered a better form of gluten free, as long as the food has been handled properly and does not contain gluten by contamination. It could be considered better because it eliminates all of the foods that commonly cause inflammation and autoimmune response. A person that is sensitive to gluten may not know whether they are also sensitive to dairy or other foods. Chances are they will never be tested for these proteins. Each individual is different, but many people with one allergy, will have many. In this respect, the Paleo diet could be considered a more hyp0-allergenic diet than gluten free. Paleo for example avoids legumes of which peanut is a good example. As you probably know, many people are highly allergic to peanuts.
Gluten free however is never Paleo. The gluten free diet allows consumption of rice, legumes and dairy. These foods are avoided on the Paleo diet. To summarize, for the most part, Paleo is gluten free, but gluten free is not Paleo. 
As far as weight loss, Paleo again may have a slight advantage. The gluten free individual may inadvertently add a lot of dairy to their diets. These dairy foods could result in increased calories. The Paleo diet also emphasizes low sugar, where the gluten free diet may include more sugars. I am not aware of a specific test on which diet produces the most weight loss, but it would appear that Paleo has a slight advantage.
It is not unusual to see that gluten free dieters, have eventually switched to the Paleo diet. They may have found results with gluten free and wanted to try removing other common allergens from their diet by switching to Paleo. It is less common to learn of a Paleo dieter that switched to gluten free.
If you are experiencing allergy/inflammation symptoms, it is important to discuss this with your doctor and be tested for celiac. If you are merely trying to improve general health and have no serious health disorders, either diet may prove helpful. The Paleo diet is basically a self help diet that can be started on your own. You will be able to eat most of your favorite foods, as well as learning many new delicious recipes.

O.K. that may be a bit dramatic, but perhaps not as dramatic as you would think. The latest research seems to confirm among other things, that too much grain can increase your chances of serious cognitive disorders.
We are all too familar with Alzheimer’s and Dementia. We all hope it wont happen to us. Turning your golden years into years of separation and fear. What could be worse than not recognizing the ones you love, not remebering your home and the the things you love most? Of living in a world of confusion and fear.
The latest research seems to confirm that grains are connected to these afflictions. Also implicated are sugars and certain food additives such as fructose. The Mayo Clinic released a study this year that stated that a high carbohydrate diet is 3.6 times more likely to lead to cognitive disorders than low carb diets. What may seem odd is that a diet higher in fats was 42% less likely to lead to these disorders than diets low in fat.
Dr. David Perlmutter is a neurologist and president of the Perlmutter health center in Florida. He is the author of a recent book called  ”Grain Brain: The Surprising Truth about Wheat, Carbs, and Sugar–Your Brain’s Silent Killers.” This book describes in detail the effects of grains and its relationship to cognitive disorders.
There is growing evidence that Alzheimers may be a third type of diabetes. All of this is particularly disturbing considering the average U.S. diet  is over 60% carbs.
Now none of this is written in stone. There are many different studies, different doctors and certainly different books. However, there is definitely growing new evidence that  carb overload is responsible for many different diseases, including obesity, whick is a condition in itself.
So if we put it all together we find that there is a huge rise in obesity, a relationship between carbs, grains and disease like diabetes, as well as increasing evidence that other disease like Alzheimers seem to be strongly connected to too many carbs.
So you see where this is going. You may think the Paleo diet sounds crazy. Certainly some of its supporters make it seem crazy, but… it is a diet that advocates low carbs, no grains, low sugar and abstaining from foods with preservatives. When you look at much of the latest evidence, you will probably come to the conclusion that its not so crazy after all. Chances are good that in the near future you will see more evidence online, on television or in magazines or newspapers to make you think again about Paleo. Add to all of this the testimonials and success that people are having with Paleo.
Paleo is not only about losing weight. It is about feeling better and enjoying your life more. Its about decreasing your chances of acquiring terrible diseases and disorders. Keep an eye out for more news about research about diet and disease, and most likely you will at one point or another, think about giving Paleo a serious try.

Is the Paleo diet a fad diet? Hardly. While many popular diets are lucky to last a year. The
Paleo diet has been around a long time. Actually, since the Paleolithic times.
The concepts behind Paleo can be traced back to 1863 when William Banting published a “Letter on Corpulence Addressed to the Public.” Banting talked of a diet for weight control omitting bread, butter, milk, sugar, potatos and beer. There were other voices in these early years from scientists and figures of authority calling for a diet very similar to the Paleo diet.
In 1975 a gastroenterologist named Walter Voegtlin was one of the first to suggest that
following a diet similar to the Paleolithic era would bring vast health improvements. He
noted that this diet was one of a carnivore, mainly proteins and fats with small amounts of
carbs. He prescribed this diet for his own patients for the treatment of colitis, ibs, crohn’s
disease and other digestive disorders.
In recent years Loren Cordain is accredited with restarting the interest in the Paleo diet,
however there are many doctors and scientists that have also backed up this diet. Loren
Cordain is a scientist that specializes in nutrition.
In the past few years more and more research has emerged backing up the idea of low carbs and sugars for health and weight loss. There are authorities that have been hesitant to endorse the Paleo diet, however when you investigate what they do recommend, it is in effect a diet close to the Paleo diet. In fact, most modern diets, regardless of what they call it, are similar to Paleo. It is becoming mainstream knowledge that grains and dairy make you fat, and can also make you unhealthy.
The Paleo diet does not require a guru, or a gimmicky device to work. Most people are self
taught in the privacy of their own homes.
Perhaps the strongest evidence for Paleo comes from these self taught people. There are
thousands of articles and posts that boast of the results of Paleo. The majority of people
that give Paleo a serious try, get great results. These results include fat loss, improvement
or the cure of chronic health problems. The dieters also report improvements in cognitive
skills, sleep, energy, skin and more.

The Paleo diet is a diet of reason. You dont have to eat nothing but lemon juice and water. You dont have to cleanse yourself with herbal laxatives, or expect results from some miracle berry from Peru. Paleo is far from a starvation diet, and you dont have to purchase pre-made meals in a box. It is a diet that can be worked in reasonably, into just about any routine. Paleo is called a lifestyle because it is a way of living, more than a fad crash diet.
Add to all of this a diet that is satisfying, enjoyable, and offering thousands of recipes with numbers growing every day, and you have a diet that will be around in one form or another, for a very long time.

Have you ever met a Paleo fanatic? I have. In truth they are just like any fanatic, annoying. The annoying thing about any fanatic is no matter how obnoxious they are today, next month they will be a fanatic and obnoxious about something different.
If youve read our other articles, you probably have realized that I mostly discuss a “modified” Paleo diet. When I say modified, I say it because I do not personally follow all the rules set by the very scientific Paleo community. If you want to, thats fine with me. Most of us choose Paleo to get a leaner body and to feel healthier. It has been proven that you can do this, even following the Paleo diet about 80% of the time. And lets face it, if we make unreasonable demands on ourselves we will never stick with any diet. A good diet has to work with being able to fit into a fairly normal lifestyle.Do these Paleo fanatics live in a cave? Do they not drive an automobile? Im happy to report, you can lose weight and feel healthier with the Paleo diet, and you dont have to be a Paleo fanatic.
I think the information about the Paleo era is interesting. I believe there is a lot of truth about it. However, lets face it, that was a long time ago and there is a lot of speculation. So the caveman thing isnt real important to me. However, results are very important. I mentioned before that there are basically two ways to follow the Paleo diet. You can follow it 100%, or you can follow it most of the time. And they both work.  If you are suffering from an autoimmune disorder, make no mistake, you want to follow it 100%. If however you are just trying to lose body fat and feel better, most of the time Paleo will work fine for you.
So its not really the caveman hype that appeals to me. What does appeal to me is that Paleo makes sense and helps many people to lose weight, and feel healthier. How does Paleo do this?  I am a fairly allergic type person, and I will try to explain this in simple terms. I am not a doctor or scientist, but I have learned a lot about allergy through the years.
Its a fact. Many peoples bodies, do not like grains, dairy and other proteins. Allergies are the bodies reaction to these things it doesnt like. These things are all strong proteins. The symptoms are the result of the body trying to defend itself from proteins it doesnt trust. In other words when you are exposed to something your body doesnt like, it is in effect saying, “there is this protein im not sure about. It must be a parasite or germ that is trying to do me harm, so I will try to kill it.”  Now thats probably a pretty funny way to put it, but thats the allergic response in a nutshell (no pun intended). So the body tries to kill this thing that it thinks might be a parasite, or germ or other invading entity. It releases tons of chemicals to get rid of it. These include histamine, cortisol and others. Your defense system means business. So what happens is a state of inflammation at first. Something will be inflamed. If its pollen and your nose, your sinus passages will be inflamed and swollen. In the worst case scenarios, your body is actually attacking itself. It is doing harm to itself in its defense, and this is the basic nature of autoimmune disorders.
Hay fever is a bothersome autoimmune condition, but its fairly harmless. If this condition takes another form, you may have diabetes or other serious and deadly, health disorders. The truth is, most people that have food allergies are allergic to the same types of proteins. And guess what they are? Mostly grains and dairy, soy and legumes. Yes that is a common problem for many people with allergies. But even if you dont have allergies that you know of, these proteins may still trigger responses from your body. Many people keep eating things that are slowly killing them or at best, making their life miserable and expensive. You may have been eating foods since a child that are causing inflammations in your body. I know, i speak from experience.  But the good news is once you remove these sources of irritation, the inflammation calms down, and you feel better.
But thats not all. It has been proven many times, that grains carbs and sugars are also making us fat. So are food preservatives. Preservatives have been linked to major diseases like heart conditions and even cognitive problems like dementia.
So this is the part of Paleo that I love.

Paleo Pizza Challenge

What is the Paleo Pizza challenge ? The challenge is to make a pizza paleo without cheese and have it taste good.

I have been enjoying Paleo foods for a few years now. Ive had many delicious Paleo meals. I enjoy just about every Paleo meal i consume. I enjoy my breakfasts, lunches and dinners, and I enjoy many Paleo snacks and treats. I have consumed amazing Paleo party foods. I have even enjoyed Paleo cookies and Paleo brownies. But Paleo Pizza is no easy task.
Its all about the cheese. Now if your Paleo diet includes cheese, you will probably find a pizza that tastes good. However, if you dont allow cheese, to the best of my experience, you are going to have a rough time finding a tasty pizza. It could happen. I would like to remain hopeful, but many of the “Paleo pizzas” i have tasted bear little resemblance to the real thing. Im just being honest here. I have had  pizzas without cheese that were good, but they were a far cry from regular pizza. After all, a good pizza is loaded with cheese.
Where can you buy a Paleo pizza ? This is not as easy as most Paleo snacks or Paleo party foods. There are restaurants, especially in NYC that do offer Paleo and claim theirs tastes like the real thing. But often, those are pizzas with a Paleo crust, and cheese.
You can buy Paleo Pizza crust mix from Julian Bakery. Most of their products are good so I would assume their pizza crust is also. Here are the ingredients;
  • Arrowroot Flour
  • Almond Flour
  • Pumpkin Powder
  • Dried Egg Whites
  • Xanthan Gum
I have little doubt that their pizza crust is good. Just add some mushrooms, onions, peppers and …… cheese. This doesnt top Paleo people from trying though. There are many Paleo pizza recipes available, both online and in Paleo books. However, your biggest challenge will be the cheese. Another challenge is tomatoes. Many Paleo experts do not eat tomatos as they fall into a category called nightshades.
Here is a somewhat typical Paleo pizza recipe;
Crust Ingredients-
2 Cps Almond Flour
-1/2 teaspoon. Garlic Powder
-1/2 teaspoon  Salt
-1/4 teaspoon of  Baking Soda
2  Eggs
-1 Tablespoon of Olive Oil
Instructions
1. Preheat your oven to 350*.
2. Mix the contents together into a dough ball.
3. Place the ball on oiled pizza tray and hand mash into a pizza crust
4. Bake for aprox. 15 minutes
5. Remove the crust from oven and add your favorite toppings.
6. Put back into the oven until the toppings are warm.
So there you have it, and its probably o.k. but compared to a real pizza, its not going to work for me. so here is my personal solution. Cheat.
If you are not using the Paleo diet to control an autoimmune disease, that is you are just doing it to lose some weight and feel better, you can allow yourself to cheat on occasion. and put pizza high up on your list.I know I do. Even if you eat a real cheese pizza once a week, it should not interfere with your goals. Remember though, if you are trying Paleo to improve a health condition, you will want to follow Paleo 100% if possible.
It is usually easy to come up with a Paleo version of any common food. Most of the Paleo versions are good if not excellent. However, a great pizza without cheese or tomato ? While I remain hopeful, it remains to be seen.
