paleo breakfast ideasThey say breakfast is the most important meal of the day. It begins your day with vitamins and nutrients, and energy to start your activities. Many people skip breakfast to try to lose a few pounds, however studies show that skipping meals, especially breakfast can lead to obesity. One reason is that you need nutrients to get you going and many people that skip breakfast try to make up for it by eating more snacks or larger meals later. Your mother was right, eat a good breakfast. If your mother was Paleo savvy, she would tell you to eat a good Paleo breakfast.Lets examine some good Paleo breakfast ideas.
We covered in a previous post that breakfast for many is a carb and sugar fest. Its kind of ironic that so many of us have been conditioned to think that the best meal you can have for breakfast is a big bowl of cereal. Especially when we now know that so many autoimmune problems and weight problems come from eating grains. Not only do we eat grains, we eat commercial cereals loaded with sugar and preservatives. This does give us energy briefly, and probably sets us up for blood sugar problems later on. If you wanted to make a small change in your body fat, and wanted to do the most for the least, it may be to switch your carb breakfast, to a Paleo breakfast. And trading cocoa puffs for bacon and eggs, isnt a bad trade. Here are some Paleo breakfast ideas to think about.
Lets start with eggs. Great protein, vitamins and minerals, a source of omega 3. Try to purchase organic or better quality eggs for your Paleo breakfast . Eggs can be hard boiled which are great when you are on the go, scrambled, over easy, and you can make great omelettes with a little coconut milk and your choice of vegetables, mushrooms, peppers etc. Very tasty. Now lets add some meat for protein. There is of course the beloved bacon, but you can switch that up with some sausage or ham,kielbasa or even beef. If you have Paleo leftovers, you can add some of the meat to your egg dinner. There are many Paleo recipes for eggs available and they are satisfying and nutritious.
I mentioned in another post that fish makes a great breakfast. In other countries this is very common, but to us and our cocoa puffs, it sounds odd. I love salmon just about any time of day, and i have enjoyed it many times for breakfast. Its light, tasty and full of nutrition. Again if you have any Paleo leftovers, add them to your salmon or cod. Many people like sardines for breakfast. They are a bit strong for me for breakfast, but I have seen many people in the forums that swear by them for breakfast.
Vegetables are delicious any time of day and great for breakfast. One of my favorites is asparagus. Try a light egg poured over cooked asparagus, its delicious. Any left over vegetables are great for breakfast, and raw veggies are excellent also. You could have a few carrot sticks with your eggs and bacon. And you thought you wouldnt know what to eat. In fact, with Paleo, you end up eating a lot of great foods all day long.
I always try to eat fruit in the morning. If not for breakfast, right after or as a mid day snack. A tasty fruit cocktail is delicious in the morning and really wakes up your tastebuds. The fruit is full of healthy fiber and antioxidants as well. Berries and cherries are the best for antioxidants and they can be mixed with nuts, coconut shavings and other tid bits to make a Paleo breakfast cereal. Once you get started with this, you will have a lot of these things on hand. You will probably also plan out your mornings so that you have left over vegetables and things like that around. I know no one wants to cook all that first thing in the morning. Most of us cant. However, as you get familar with Paleo, especially with the Paleohacks Cookbook, you will learn to shop and store for your meals. You will be getting the best nutrition for your money also.
Lastly  are baked goods. How about blueberry muffins? You thought you saw the last of them? No way. Paleo blueberry muffins are delicious. You can eat most of your baked favorites, just by substituting a nut flour for your all purpose flour. Once you get the hang of this, muffins, pastries, pancakes are all waiting for you. There are literally hundreds of baked goods recipes that are delicious for breakfast. You can even search online, or on Pinterest and find a lot of delicious baked goods to try. Here is a coconut pancake recipe to get you started.
Ingredients
  • 4 eggs
  • 1 cup coconut milk
  • 2 teaspoons vanilla extract
  • 1 tablespoon coconut nectar
  • 1/2 cup coconut flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cinnamon
  • coconut oil for frying
  1. Preheat pan or griddle over medium-low heat. Beat eggs in a stand mixer until foamy. Mix in milk, vanilla, and coconut nectar.
  2. In a small bowl combine coconut flour, baking soda, sea salt and cinnamon and whisk together.
  3. Combine dry mixture with wet in the stand mixer and beat on medium speed for about 30 seconds. Scrape down sides of bowl then mix on medium to medium-high for another minute or two or until the coconut flour is completely mixed into the batter.
  4. Grease pan with coconut oil. Pour batter to create pancakes that are about 3 inches in diameter. If the batter seems too thin you  add a small amount of coconut flour to achieve the desired consistency.
  5. Cook for approximately 3 minutes, flip and cook an additional 2-3 minutes.
  6. Serve hot with coconut oil, coconut nectar, agave nectar, honey, syrup or fruit.
